Four plots at Berry St. Gardens—two of which are planted in cover crop (hairy vetch, oats, peas, and red clover). A rotation of two plots in garlic, two in cover crop. Our annual yield is around 650+ garlic plants.

At Lary’s Gourmet Garlic we micro-farm carefully nurtured organic hardneck garlic. Unlike store-bought garlic, this garlic is heavy and juicy. Because our garlic is carefully air-cured for one week to ten days after harvest, it stores well—past six months—if kept in a cool, dark, well-ventilated space.

Take a look at our maturing garlic as it begins to scape—four varieties—along with a plot of hairy vetch which will be harvested allowing our operation to use cover crop as both a soil restorative and as an effective organic mulch for the next season’s crop.
